Before service, sit down. Not at the pass, not at the crew table — in the guest's chair.

Look at the sightline. Listen to what is audible. Notice the draught, the glare, the reflection, the noise from the kitchen door.

Then ask the only question that matters: what does this moment feel like from where they are sitting?
